We’re still dreaming about that dish. This next dish was an unexpected hit. The Artichoke & Green Pea Farfalle brought new flavors to our table. Artichokes and peas cooked up in a white wine sauce and then mixed with farfalle, chickpeas and then topped with freshly shaved Parmesan brought an elegant element to what would have been a typical mundane weekday meal. The Thai Peanut and Sweet Potato Rice Bowl was a humble indulgence with the Asian peanut butter sauce tossed with roasted sweet potatoes, toasted organic tofu, wilted kale and brown rice. Next up, we felt the magic of the Mediterranean Foldover. With whole wheat dough, we were able to personalize the size of our flatbread and then add in all of the scrumptious ingredients including broccoli, cauliflower and goat cheese all with a Mediterranean sumac vinaigrette. If we were in a mid-day lull, the Edamame Hummus with Fresh Pita came to our rescue. Again, we made our own flatbread, then drizzled olive oil over the pre-made Edamame Hummus, and then piled on the best part—Olive Tapenade. We had no problems cooking any of these dishes, but if you do, there’s a dinner hotline you can call with questions. And, since meals change every week, you couldn’t possibly get bored.
